Potato Egg Puff

  • Ingredients for 4 Servings

    Nonstick vegetable spray

    4 eggs

    1 cup potato, cooked and mashed

    Salt and pepper to taste

    3 ounces reduced-fat cheddar cheese, grated

    Green onions, chopped (optional)

  • Directions

    1 In a large bowl, combine the vegetables and garlic. Mix well.

    2 Coat a large skillet with cooking spray and bring to medium-high heat.

    3 Add vegetable mixture and let simmer until vegetables are cooked.

    4 Add tofu and salt.

    5 Cook, stirring occasionally, until all liquids are absorbed.

    6 If desired, add hot sauce to taste.

    7 Serve with whole-wheat toast or warm whole-wheat tortillas.
