Hearty Breakfast Tacos

  • Ingredients for 4 Servings

    Nonstick vegetable spray

    4 soft corn tortillas, 5-inch diameter

    4 eggs, beaten

    1 cup cooked or canned black beans, no salt added

    ½ avocado, sliced

    1 cup tomato, chopped

    ½ cup fresh cilantro leaves, chopped (optional)

  • Directions

    1 Warm the tortillas in a nonstick skillet over medium heat. Set aside and keep warm.

    2 Coat skillet with nonstick spray. Pour eggs and stir with a heat-safe spatula until cooked.

    3 Put the black beans in a microwave-safe bowl. Cover and heat on high for about 1 ½ minutes, or until just warm.

    4 Top each tortilla with the eggs, beans, avocado, tomato, and the chopped cilantro (if desired)

    5 Serve open-faced or folded over.
