White Bean and Lamb Soup

Ingredients

Serving Sizes

  • 5 oz ground lamb

    3 oz dried beans

    1 clove of chopped garlic

    Handful of mixed greens

    ¼ lb chopped seasonal vegetables

    2 tsp bouillon (1 tsp per cup of water)

  • 10 oz ground lamb

    5 oz dried beans

    2 cloves of chopped garlic

    5 oz mixed greens

    5 oz chopped seasonal vegetables

    4 tsp bouillon (1 tsp per cup of water)

  • 1 lb ground lamb

    ½ lb dried beans

    3 cloves of chopped garlic

    ½ lb mixed greens

    ½ lb chopped seasonal vegetables

    6 tsp bouillon (1 tsp per cup of water)

Instructions

  1. Soak dried beans in water, 8 hours overnight. Drain, rinse, set aside.

  2. Heat oil in large pot over low heat. Stir chopped onions in hot oil. Stir in garlic, cook for 1 minute, and increase to medium heat.

  3. Add lamb, cook for 3-4 minutes. Stir in mixed vegetables and add desired seasonings (such as parsley, thyme, oregano, salt, and pepper).

  4. Add beans and 1 cup of water for every tsp of bouillon you add. Bring to a boil and cook for 5 minutes.

  5. Reduce heat to medium-lower, cover the pot, and let simmer under beans are tender (about an hour and a half).

  6. Serve and enjoy!!
