Porcupine Meatballs

  • Ground Beef

  • Onions

  • Bouillon

  • Rice

  • Tomato Sauce

Ingredients

Serving Sizes

  • ½ lb lean ground beef (about 6 meatballs)

    ¼ cup chopped onions

    ½ tsp bouillon (with ½ cup water)

    ¼ cup rice

    ½ can (7.5 oz) tomato sauce

  • 1 lb lean ground beef (about 12 meatballs)

    1/3 cup chopped onions

    1 tsp bouillon (with 1 cup water)

    ½ cup rice

    1 can (15 oz) tomato sauce

Instructions

  1. Mix ground beef, rice, water, onion, and desired spices (such as celery salt, garlic power, and black pepper) in a bowl until well combined. Roll mixture into separate meatballs.

  2. Heat oil in large skillet over medium-high heat. Cook meatballs until browned (about 8 minutes) turning once halfway through. Drain and dispose of excess grease.

  3. Pour bouillon, water, and tomato sauce into the skillet and reduce heat to medium-low. Cover and simmer until meatballs and no longer pink in the center and rice is tender (about 45 minutes).

  4. Serve and enjoy!
