Seasonal Hamburger Soup

Ingredients

  • 2 cups hamburger soup base (broth and meat)

    2 cups chopped seasonal vegetables

    2 diced potatoes

  • 4 cups hamburger soup base (broth and meat)

    4 cups chopped seasonal vegetables

    4 diced potatoes

Instructions

  1. Peel and dice the potato into small cubes. Wash and chop the seasonal vegetables into bite-sized pieces.

  2. Heat the large pot over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if necessary.

  3. Add the diced potato, chopped seasonal vegetables, and beef broth to the pot. Stir it all together.

  4. Add additional water/broth if needed to ensure all ingredients are covered.

  5. Bring the mixture to a boil. Reduce heat to low, cover, and simmer for 8–10 minutes or until the potatoes and vegetables are fork-tender.

  6. Add seasonings to taste. Stir thoroughly.

  7. Serve and enjoy!!
