Cheesy Tuna and Veggie Quesadilla

  • Ingredients for 4 Servings

    1 can (5 ounces) tuna in water, drained

    1 small tomato, diced

    ½ green pepper, seeded and diced

    ½ cup low-fat cheese, shredded

    4 whole-wheat tortillas, 8-inch diameter

  • Directions

    1 In a bowl, mix together tuna, tomato, green pepper, and cheese. Spread one-quarter of the filling over half of each tortilla. Fold tortilla over filling.

    2 Heat each quesadilla in a skillet over medium heat until the cheese starts to melt. Turn the quesadilla over and cook for another 30 seconds to 1 minute.

    3 Garnish with chopped tomatoes.
